This Opening Day, join Ratio Beerworks in celebrating the return of spring and the time honored tradition of a cold refreshing beer-in-hand for America’s national pasttime. On April 7th, Ratio Beerworks is re-releasing Handwritten Belgian Wit.

There’s something to be said about a universal connection, either through the conduit of a familiar song, an emotion, or even a beer. Handwritten is our twist on a classic Belgian Wit with tea-cut orange peel and ground coriander. Familiar in flavor profile and ubiquitous enough for any occasion, Handwritten is a connector, a unifier, a true beer soul-mate and companion. The abbey yeast strain gives off more floral, fruit-forward notes than a classic wit yeast, but still rounds out with a recognizable, balanced, clean, crushable finish.

Handwritten will be tapped when the brewery opens at Noon so drop in for a taste before first pitch.

After more than 2 years of patiently waiting, we are finally ready for the first official bottle release from our barrel-aged sour pogram on Saturday, April 8th, Peach Climacteric! Here’s the official description for Peach Climacteric:

Peach Climacteric is the first official release from our barrel-aged sour program and represents the culmination of nearly 2 years of work, which began when we opened our doors back in 2015. We started with a blend of various batches of pale golden sours, fermented with multiple strains of Brettanomyces and bacteria and aged in oak barrels for anywhere from 4-16 months. The climacteric event marks the peak of edible ripeness for fruit and Peach Climacteric certainly lives up to that description after aging the blend with over 1,600 pounds of fresh peaches from Palisade, CO (nearly 4 pounds of peaches per gallon).

We know many of you have been just as anxious for its release as we are and we can’t wait to share it with you. Peach Climacteric will be our first 750 mL bottle release, and is also the first beer we have bottle conditioned, thanks to a TON of help from our friends at Wiley Roots Brewing Company, who not only let us borrow their bottle filler, but also helped us figure out the entire process.

In an effort to make this release as smooth as possible and alleviate some of the logistical challenges with a release this size, we will be selling tickets online through Eventbrite before the event, which will be exchanged for bottles, picked up in person at the brewery on April 8th between 11 am and 5 pm. If you are unable to pickup bottles during the pickup window on April 8th, PLEASE, DO NOT BUY TICKETS! Tickets must be purchased online and will not available to purchase in person. Tickets will go on sale promptly at 4:00 pm MDT on Sunday, March 26. Be sure to read all of the details below before purchasing tickets!

Ticket Details (please read carefully!)

~Individuals must be 21 or older to purchase tickets, as verified by a valid photo ID at the time of ticket exchange (bottle pickup).
~Each ticket entitles the purchaser to (2) two 750 mL bottles of Peach Climacteric, with a strict limit of (1) one ticket per person (2 bottles per person). Additional orders placed that exceed the limit of 2 bottles per person will be cancelled without notice.
~The name entered as the Ticket Buyer at the time of purchase MUST MATCH the name on the credit card used for purchase. Orders that do not match will be cancelled without notice.
 ~Tickets must be exchanged for bottles in person at WeldWerks Brewing Co. (508 8th Ave, Greeley, CO 80631) on Saturday April 8th between 11 am and 5 pm. Tickets (either digital or printed) must be presented in order to receive bottles.
~A valid 21+ photo ID must be presented at the time of pickup, and the name on the ID MUST MATCH the name on the ticket.
~All bottles must be picked up between 11 am and 5 pm on Saturday, April 8th. All unclaimed bottles remaining after the pickup window will be forfeited. Orders for unclaimed bottles will be refunded within 72 hours, less a 15% restocking fee.
~All sales are final and no returns or exchanges will be accepted.
~Individuals who attempt to violate these policies may be ineligible for future bottle purchases, so please do not waste our time and yours by trying to circumvent the rules.

COLORADO WHISKEY BARREL AGED QUIXOTIC
 This B.A. Belgian Quadrupel has intense flavors of caramelized sugar, apples, and smooth oaky vanillas that intertwine against cherry and marshmallow undertones within each delightful sip. 

These are both ready to drink now, however can also cellar for extended aging.

The practice of breweries collaborating with bands and musicians to brew a beer, has become fairly commonplace. In fact at Ratio, we teamed up with Denver locals, The Knew for the original release of our Lime Gose. 

That said, in paying homage to Denver’s thriving comedy scene, we were thrilled to collaborate with Denver’s native son, Adam Cayton-Holland of Those Who Can’t and The Grawlix, on an easy-drinking Lemon White IPA. 

ACH IPA was built using white wheat malts, for a clean, pale, appearance. It was then accentuated with dried lemon peel in the boil for a refreshing citrus base. We then finished this hoppy, crushable IPA, by dry-hopping with Lemondrop hops and lemon zest for a tangy bitter finish.

Join Ratio Beerworks on Saturday, April 8th for a limited 50 bottle hand-numbered bomber release of ACH IPA when the brewery opens at Noon. Then stay for a free night of comedy featuring Adam Cayton-Holland, Adam Burke, Timmi Lasley, Matt Cobos, Geoff Tice, and Ian Douglas Terry at 7pm in the Ratio Brewhouse.

The second Saturday of each month we will be filling our Fässer with one of our Keller lagers directly from the lager tank. The unfiltered lager will change each time depending on what Bill and Ashleigh think is tasting particularly good. It’s on until it’s gone which was just under 3.5 hours last month. Perhaps some Keller Maibock is on the table.

We’re very excited to announce the release of two very exciting beers from our barrel stack program: 

– Edgar Motta y la Madera: dark sour fermented and aged for 14 months in a third use bourbon barrel. The latest in our barrel stack series, this dark sour with vanilla beans and pink bourbon coffee from our friends at Sweet Bloom Roasters is incredibly complex with a huge coffee aromatics. With the first sip, the coffee character comes forward quickly followed by an assertively sour mid-palate impression that trails off and finishes with subtle vanilla creaminess.

– Brett Barrel Aged Sappy Roots: International Mazer Cup silver medal award winning farmhouse style sour, aged in a neutral wine barrel with a culture of two strains of brettanomyces. This beer begins with orange blossom citrus and honey aromatics with a touch of funk. A prominent honey character abounds in the foreground that blends into a medium-high assertive tartness throughout. This beer drinks with a predominately dry and citrusy finish.

Limits:
– 150 bottles of Edgar Motta will be available on a 2 per person limit. $20 per bottle.
– 150 bottles of Brett Barrel Sappy Roots will be available on a 2 per person limit. $20 per bottle.

Join us for the release of Bianca Raspberry Wild Wild Brett!

This collaboration with Omnipollo is a wild ale fermented in oak foeders with raspberries and lactose.

We will also be releasing a limited amount of Ampersand Volume 3, Chapter 2, a burgundy sour ale aged in Ransom Rye Whiskey barrels.

Both will be available on draught and in 375ml bottles, but they wont be around for long!
