After aging for four months in Leopold Bros. Maryland Style Rye Whiskey Barrels, we aged our Imperial Stout on Dragonfly Dark Horse Coffee. Chocolate, toffee and floral rye whiskey spice complement the robust pepper and smoky notes imparted from the Dark Horse Coffee to deliver a buzzworthy, barrel aged experience.

Every so often fate allows two epic forces to collide, like OMF with Odd13, or a hurricane with a sharknado. In the case of Colonel Gil Shepard, a strong German-inspired Kölsch meets cutting-edge Bavarian hops and a modern American IPA mindset. Calista hops and experimental fermentation with a traditional yeast from Köln combine crisp drinkability with a fruity punch of pineapple, apricot, and lemon… and please remember: don’t hassle the Hoff!

Continuing our series of concert-level performances in a casual setting, we proudly present Brass & Beer with Apollo Chamber Brass! A quintet of the highest caliber, we are honored to host these gentlemen for their first brewery performance. It’s the sixth annual Big Ass Tap Takeover. If you’ve read that before, you can stop reading. If you have not, keep reading…

…All of our beer-centric locations (Castle Rock, Greenwood Village, Highlands Ranch, Longmont and Northglenn) host a plentitude of crafty offerings from one brewery on one fine, fine day. Also known as The Big Ass Tap Takeover.

Some locations will have upwards of 40 different Avery beers on tap allowing you to stay in your backyard, yet get the feel of what it’s like to drink from their very own taproom in Boulder.

It’s all damn day, people. You can be here at some point. There will be raffles for beer swag, Avery reps on site to talk shop (craft beer), shenanigans, New York style pizza.

As Denver’s ever erratic seasons begin to settle, join Ratio Beerworks in celebrating spring in full bloom. On Saturday, April 29, Ratio kicks off warmer days with a Handwritten Belgian Wit Variant release party.

Denver Beer Co’s Oyster and Stout Festival!

We have teamed up with our friends at Seattle Fish Company and Blue Island Oyster Bar and Seafood to brew a delicious Oyster Stout. Blue Island Oyster Stout was brewed with live Blue Island No. 9 Oysters from Peconic Bay New York. On Saturday, April 29th from 12-5pm we will be pairing this briny brew with Oysters from both coasts at our Platte St Taproom.

$30 for 2 beers and a dozen oysters.
$20 for an additional dozen oysters.

Belle: a sour oatmeal pale ale aged 2 years in whiskey oak barrels and aged 3 months with golden passion fruit. Careful, you might just lose your horses while drinking this brew (historic reference, anyone?)

This beer is named for Myra Maybelle Shirley (Belle Starr), a true American outlaw. She was known to ride sidesaddle, dressed in black velvet, toting a pistol in each hand. She led a ring of horse thieves and ran with other famous outlaws such as Frank and Jesse James. The Bandit Queen of the Old West!

Come join us for our monthly taproom only release party! This month, we are releasing 2 beers on the same day. We are releasing a collab IPA, and a barrel aged Saison. See details below.

1) Kaptain Ka-Powder (6pks of our version only & draft)
Collaborative juicy IPA brewed with Upslope Brewing. We each brewed the beer with hop products containing no leaf matter. OUR VERSION was brewed with lupulin powder (Mosaic and Simcoe), THEIR VERSION was brewed with hop extracts. We will have a limited quantity of the Upslope version on tap during the release party.

2) Barrel Aged Liftmaster 13,000 (500ml only, no draft)
Mixed-culture Bier De Garage fermented and aged in a fresh chardonnay barrel. The result is a moderately tart vinous beer with bright flavor, and contributions of white wine, fresh oak, and young brett.

*Our 2nd Anniversary Beer is an homage to one of our favorite beers of all time, Orval. Call us old school, but we think Orval is about as close to perfect as a beer can get. We created a Belgian Pale, dry hopped it, and then aged it on Brettanomyces. While it’s no Orval, we love the results.

Pig (2pm-ish): Brewer’s are good at brewing beer, not roasting pigs. We realized this early on, and so when we decided to roast a pig for this party, we also decided to ask some friends for help. We are incredibly lucky that Chef Kyle Foster (opening Julep on Larimer St) and Tyler Dubois (Co-Owner of The Real Dill and Co-Founder of the Pickle and Beer Society) have agreed to perform this culinary feat for us. Our hope is to start serving pig around 2pm. Sides will be included.

This Opening Day, join Ratio Beerworks in celebrating the return of spring and the time honored tradition of a cold refreshing beer-in-hand for America’s national pasttime. On April 7th, Ratio Beerworks is re-releasing Handwritten Belgian Wit.

There’s something to be said about a universal connection, either through the conduit of a familiar song, an emotion, or even a beer. Handwritten is our twist on a classic Belgian Wit with tea-cut orange peel and ground coriander. Familiar in flavor profile and ubiquitous enough for any occasion, Handwritten is a connector, a unifier, a true beer soul-mate and companion. The abbey yeast strain gives off more floral, fruit-forward notes than a classic wit yeast, but still rounds out with a recognizable, balanced, clean, crushable finish.

Handwritten will be tapped when the brewery opens at Noon so drop in for a taste before first pitch.

After more than 2 years of patiently waiting, we are finally ready for the first official bottle release from our barrel-aged sour pogram on Saturday, April 8th, Peach Climacteric! Here’s the official description for Peach Climacteric:

Peach Climacteric is the first official release from our barrel-aged sour program and represents the culmination of nearly 2 years of work, which began when we opened our doors back in 2015. We started with a blend of various batches of pale golden sours, fermented with multiple strains of Brettanomyces and bacteria and aged in oak barrels for anywhere from 4-16 months. The climacteric event marks the peak of edible ripeness for fruit and Peach Climacteric certainly lives up to that description after aging the blend with over 1,600 pounds of fresh peaches from Palisade, CO (nearly 4 pounds of peaches per gallon).

We know many of you have been just as anxious for its release as we are and we can’t wait to share it with you. Peach Climacteric will be our first 750 mL bottle release, and is also the first beer we have bottle conditioned, thanks to a TON of help from our friends at Wiley Roots Brewing Company, who not only let us borrow their bottle filler, but also helped us figure out the entire process.

In an effort to make this release as smooth as possible and alleviate some of the logistical challenges with a release this size, we will be selling tickets online through Eventbrite before the event, which will be exchanged for bottles, picked up in person at the brewery on April 8th between 11 am and 5 pm. If you are unable to pickup bottles during the pickup window on April 8th, PLEASE, DO NOT BUY TICKETS! Tickets must be purchased online and will not available to purchase in person. Tickets will go on sale promptly at 4:00 pm MDT on Sunday, March 26. Be sure to read all of the details below before purchasing tickets!

~Each ticket entitles the purchaser to (2) two 750 mL bottles of Peach Climacteric, with a strict limit of (1) one ticket per person (2 bottles per person). Additional orders placed that exceed the limit of 2 bottles per person will be cancelled without notice.
~The name entered as the Ticket Buyer at the time of purchase MUST MATCH the name on the credit card used for purchase. Orders that do not match will be cancelled without notice.
 ~Tickets must be exchanged for bottles in person at WeldWerks Brewing Co. (508 8th Ave, Greeley, CO 80631) on Saturday April 8th between 11 am and 5 pm. Tickets (either digital or printed) must be presented in order to receive bottles.
~A valid 21+ photo ID must be presented at the time of pickup, and the name on the ID MUST MATCH the name on the ticket.
~All bottles must be picked up between 11 am and 5 pm on Saturday, April 8th. All unclaimed bottles remaining after the pickup window will be forfeited. Orders for unclaimed bottles will be refunded within 72 hours, less a 15% restocking fee.

Collaboration Fest 2017 Recap

The 4th Annual Collaboration Festival rolled into Denver’s Western Complex this past weekend. We love the spirit of this unique festival as Colorado breweries team up with other breweries both near and far to make never before tasted beers, all to be poured throughout the event.

That said, it probably wasn’t our favorite Collab Fest. I don’t want to be negative, but this year’s event seemed to have lost a little something by moving from the Club Level of Sports Authority Field to the cold, concrete floors of the Western Complex. And I really could have gone for a beer menu or at the very least, a description of the beer at each booth. That said, we still had a ball and were more than willing to cast aside our disdain for country music for a few hours in order to seek out some of the fine new brews making their debut.

A few standouts:

  • Crooked Stave and Omnipollo Bianca Raspberry Wild Wild Brett, loads of raspberry smooth creamy deliciousness.
  • Our Mutual Friend and Wiley Roots Precious Medals, NE-style Triple IPA with actual gold flakes. Ridiculously expensive tropical haze bomb.
  • Fossil Craft and Cerberus Nichoria NE-style double IPA. This Colorado Springs duo delivered an excellent juicy treat. You really need to make a trip down there and visit both of these spots.
  • Crazy Mountain and Larimer Beer Peach Slap Sour. A ton of peach, quaffable and refreshing. A great summer beer.
  • WeldWerks and Great Notion Bitsbox NE-style Double IPA. I may or may not have lined up for this beer again and again and again… and again……
  • Odd13 and Kane Spiciest Memelord Habanero & Raspberry Kettle Sour. Holy sheet good.
  • Beryl’s Beer and Goose Island Des Cousines Barrel-Aged French Wild Ale. Funky, but easy drinking and completely delicious.
  • TRVE and Cerebral Brain Transplant Mixed Culture Dry-Hopped Foeder Beer. While all 3 beers pouring at the TRVE altar were great, Brain Transplant was the perfect melding of two of our favorite Denver breweries. Look for a bottle release in the near future.
This year’s lineup was all over the board, ranging from Saison’s to Triple IPA’s. Collab Fest certainly dishes out something for everyone and is always a highlight on the beer festival calendar. Job well done Two Parts! I always love being able to see old friends, meet new ones and even find a solid brewery or 2 that were totally off my radar.

Now in its 4th year, Collab Fest is not only a tremendous showing of the industry’s camaraderie, but also a great opportunity to sample 100+ brand new beers. Additionally, we’ll be releasing over 10 beers throughout the weekend, including the very first release of Medianoche 2017, a 14+% ABV Imperial Stout aged in Breckenridge Distillery bourbon barrels for 10 months. This particular batch is a single barrel version of Medianoche, something we have never done before. Come help us kick off Colorado Beer Week by joining us for the annual release of Work From Home, our Breakfast Porter brewed with Vermont maple syrup and cold-brewed Columbian coffee roasted by Middle State and prepared by our neighbors at the Lula Rose General Store. We will also be releasing Barrel Aged Work From Home in bottles and a limited amount on draft. This beer has been slumbering in Woodford Reserve barrels for the past 12 months.

We’re celebrating with a beer breakfast including waffles and bacon provided by Waffle Brothers! We’ll have cartoons on the big screen and highly encourage wearing your favorite pajamas. There might possibly be a best dressed prize!

Tickets are $40 and include a screen-printed glass mug, a 10oz pour of Work From Home, a 4oz taster of Barrel Aged Work From Home, a waffle and a side of bacon. Additional pours of Work From Home will be available for $5.

Crowlers of Work From Home will be available for $20 each, limit 3 per person. Bottles of Barrel Aged Work From Home will be available for $14 each, limit 4 per person. Those that attend the breakfast will have first right of refusal on their bottle allotment before we open them up to the public.

Thursday, March 9th, 2017

Sit’N Rock Ale
ABV: 5.9% IBU: 28 $6

A lightly hopped American pale ale brewed with wheat. Smooth, easy drinking, with light flavors of biscuit and a delicate citrus aroma.

Portly Porter
 ABV: 5.6% IBU: 12 $6

An English-style dark ale that smoothly delivers flavors of chocolate brownies and coffee. Restrained bitterness along with a velvety mouthfeel make this dry porter an ideal choice for the inner pub dweller.

Zuni Street IPA
 ABV: 6.7% IBU: 40 $7

A bright, unfiltered, hoppy offering, packed with flavors of citrus and tropical fruit. Full bodied and smooth, this beer is low on bitterness and drinkable to no end.

Eva’s Golden Ale
 ABV: 5.5% IBU: 18 $5

A unique, refreshing ale suited for any season. Generous hopping with Brewer’s Gold lends a bright flavor of lemon zest, backed by balancing notes of light, bready malt.

Midnight What?!
 ABV: 6.3% IBU: 18 $7

A dark Belgian abbey ale brewed with wheat. Notes of delicious chai tea spice result from the interplay of clove-like aromatics from the yeast, and a mound of freshly grated ginger steeped in the beer.

Way West Wit
 ABV: 6.2% IBU: 13 $6

Inspired by Belgian wit biers, this ale was brewed with a heap of wheat along with coriander and orange peel. Full bodied and refreshing, packed with delicious flavors from the Belgian yeast, this ale is sure to please.

As we’ve settled into 2017, we continue to look for the beautiful things this life has to offer as the world swirls around us. Sometimes, you don’t have to look much further than your own neighborhood brewery. Today, we come to you with news of the first Carriage House Series Bottle Release of 2017. 

On March 2nd at 3pm, join us for the unveiling of ‘Really Really Ridiculously Good Tasting’ a Petite Farmhouse Saison handsomely aged in Chardonnay Barrels.

Our latest barrel project started with a delicate blend of Pilsner, White Wheat and Acidulated malts. We then added Bravo hops for a spicy and floral balance. Primary fermentation began with a traditional French Saison yeast, but we later barrel-conditioned for months on end with Brett Claussenii to add farmhouse characteristics to this well-rounded beer. Expect notes of cantalope. lemon zest, and light barnyard funk with soft layers of vanilla and coconut in the finish. 

‘Really, Really, Ridiculously Good Tasting’ will be released on Thursday, March 2nd at 3pm when we open the doors for business. There will only be 120 375mL bottles available, with a limit of 2 bottles per customer. There will also be a limited amount of ‘Really, Really, Ridiculously Good Tasting’ available on tap for this event!

Join Ratio Beerworks in celebrating the return of Rented World Session IPA. 

Originally inspired by the Possible Worlds collaboration with our friends at Call to Arms, Cannonball Creek, Station 26, and TRVE, Rented World was such a staff favorite, that we decided to bring it back full time as a Session IPA. 

For Rented World, we employed our highest volume of late aroma hops to date, with massive amounts of Citra and El Dorado. Measuring in at an approachable 4.8% and 41 IBUs, this easy-drinking session IPA is big on bright citrus and pine flavors, but a mere wrinkle on the harsh bitterness scale due to the limited use of bittering hops.

Join Ratio in welcoming Rented World Session back to our core rotation of beers.

We heard you all like hazy IPAs. We will be releasing our collab with Fermaentra this Friday at Blue Moon RINO. Fermaentra will release a version shortly after. Brewed with 5 pounds per barrel of Amarillo, Azacca, Waimea, Southern Cross, Huel Melon, Mandarina Bavaria, Mosaic and Exp. 06300. We didn’t skimp on the hops.

Blue Moon RiNo is located at: 3750 Chestnut Pl, Denver, CO.

Join us for the release of You Do You, a 5.9% DDH Pale Ale hopped with Centennial, Amarillo, Motueka and Ekuanot (formerly Equinox) at over 7#/bbl. Do you even haze brah?

Seriously though, we’re immensely passionate about producing beers in this style and have been so since we opened 16 months ago. Trends come and go. Do what you love. Love what you do. You do you.
